CHAMPENOISE METHOD The "CHAMPENOISE"
method mainly consists in the fermentation from still
wine to sparkling wine directly in the bottles, as well as in its
subsequent maturation together with its residues (or funds) that
give more body and flavor, and these will be removed only at a later
time rather than after a short time as the "Charmat" method . |
