 CHAMPENOISE METHOD

The "CHAMPENOISE" method  mainly consists in the fermentation from  still wine to sparkling wine directly in the bottles, as well as in its subsequent maturation together with its residues (or funds) that give more body and flavor, and these will be removed only at a later time rather than after a short time  as the "Charmat" method .
Therefore, after the first core "roughing" the wine is poured directly into specific bottles CHAMPENOISE equipped of neck prepared for the crown cap.
The bottles are then put to rest some time, from a few months up to three years or more, in a cool cellar and away from sunlight, depending on the quality to be obtained.
At the end of ripening, they must be subjected to the "
remuage," so flipped to bring all the scum and funds close to the crown cap, and what you get tilting the bottle almost vertically and rotating them periodically in the "pupitres"; tilt tables with of holes designed specifically for this task.
When the "remuage" collects all funds towards the cap, leaving clear the wine above, these are eliminated with the disgorging, which is obtained by freezing the small part of wine near the cap (and which contains the funds) by means of  the necks freezer : this consists in a refrigerator apparatus with a tank containing the PROPYLENE GLYCOL (the only one to be used for  liquid food) that is brought to a temperature of about -25 / -30 ° C.
When the final part of the neck of the bottle there is dipped upside down, the small part of the liquid contained in it freezes and incorporates the funds. At this point, the bottle can be inverted  avoiding the turbidity and uncorked: at the opening of the crown cap the pressure of the sparkling wine ejects the block of ice with funds and leaves the bottle ready to be finally closed with the cork for sparkling wine, the cage, and so on.
There are some other simple machines which supplement and simplify all the operations described above:
The 'degorgiatore' equipped with bottle opener fixed (as in vending machines selling soft drinks in bottles) and collect waste.
It allows to remove the crown cap and collect it and the ice ejected.
